American baking blend of cinnamon, ginger, nutmeg, cloves and allspice for pumpkin pie, spiced lattes and autumn bakes.

One spice that echoes cinnamon, clove and nutmeg; less rounded. (use 0.75× the amount)

Cinnamon only; add a pinch of ground ginger, nutmeg and cloves if you can.

Adds cardamom, anise and pepper notes; still right in pumpkin bakes.

Star anise and Sichuan pepper push it savoury and liquorice-like. (use 0.75× the amount)
