Pure ground ancho chillies; mild, sweet and fruity with a deep red colour. Used in chilli, rubs, mole shortcuts and Tex-Mex seasoning.

What can replace it

    Toast, seed and grind the whole chillies first.

  • T2 · GoodGuajillo chillies

    Ground guajillo is brighter and tangier, without ancho's raisiny sweetness.

    Sweet and mild with good colour, but none of the dried-fruit depth; add a pinch of cayenne.

  • T3 · In a pinchChipotle powder

    Much hotter and smoky; use half and expect a different, smokier dish. (use 0.5× the amount)
