Sweet, sticky Cantonese barbecue sauce of soy, honey, hoisin and five-spice, often tinted red; for char siu pork and glazes.

What can replace it

    Similar sweet, five-spice base, but no red colour and less honeyed.

    Smoky and tomatoey rather than five-spiced; no red glaze.

  • T3 · In a pinchRed fermented bean curd

    Gives the classic colour and funk but needs sugar, honey and hoisin. (use 0.5× the amount)
