Chilli garlic sauce
Also called Vietnamese chilli garlic sauce, tuong ot toi, chili garlic sauce
Coarse, bright red sauce of chillies, garlic, vinegar and salt. Used in Vietnamese and Chinese cooking for stir-fries, dips, noodle soups and marinades.
What can replace it

Oilier and fruitier with less garlic and vinegar.

No garlic; stir in a little minced garlic.

Smoother and sweeter, with milder garlic and no chunky texture.

Mix with garlic, vinegar and salt; drier and less fresh. (use 0.3× the amount)
