Fenugreek seeds
Also called methi seeds, methi dana
Hard, bitter, maple-scented little seeds; fried briefly in oil for South Indian tadkas, pickles and curries, and used in panch phoron and berbere.
What can replace it

Same maple-curry aroma but leafy and grassy; no seed bitterness or tempering pop.

Bitter-pungent but none of the maple note.
