Freeze-dried tofu
Also called koya-dofu, kori-dofu
Japanese koya-dofu: tofu frozen and dried into light, porous blocks. Rehydrated, it has a spongy texture that soaks up simmering broths.
What can replace it
- T2 · GoodFirm tofu
Freeze and thaw it first for a spongy texture; it soaks up less broth. Use about four times the weight. (use 4× the amount)
- T2 · GoodTofu puffs
Spongy and absorbent but fried, so richer and oilier in the broth. (use 2× the amount)
- T3 · In a pinchKaofu
Spongy and absorbent but chewy wheat gluten, not soy. (use 3× the amount)
