Halloumi
Also called hellim, haloumi
Cypriot brined cheese with a firm, squeaky texture that holds its shape when grilled or fried. Salty and mild; served in salads, wraps and with watermelon.
What can replace it

Harder and sharper; pan-fries well as saganaki.

Much saltier; soak it in water first. Grills similarly.

Mild and unsalted, without the squeak; season well.
