Also called Louisiana hot sauce, cayenne pepper sauce, Tabasco-style sauce, buffalo hot sauce

Thin, vinegary hot sauce based on aged cayenne or tabasco chillies. Classic in Buffalo wings, gumbo, eggs and Bloody Marys.

What can replace it

    Green and grassier, a little milder.

    Much hotter and fruitier; use half. (use 0.5× the amount)

    Thicker, less vinegary and earthier.

    Whisk with vinegar and salt; thinner and flatter. (use 0.15× the amount)

    Chunky and less vinegary; thin with vinegar. (use 0.5× the amount)
