Malt syrup

Also called barley malt syrup, malt extract, moutstroop

Dark, thick syrup from malted barley; less sweet than sugar with a bready, toasty flavour. Used in bagels, pretzels, rye and wholemeal bread and malted drinks.

What can replace it

  • T2 · GoodGolden syrup

    Caramel rather than malt.

  • T2 · GoodMolasses

    More bitter and darker; use a little less. (use 0.75× the amount)

  • T2 · GoodRice syrup

    Lighter and less malty.

  • T3 · In a pinchHoney

    Floral, no malty depth; fine for bagel water.
