What can replace it

    Less sweet and more dashi-forward; add sugar or mirin.

  • T2 · GoodTeriyaki sauce

    Thicker and glossier; dilute with water or sake. (use 0.75× the amount)

  • T3 · In a pinchJapanese soy sauce

    No sweetness; mix with mirin, sake and sugar for the warishita balance. (use 0.5× the amount)
