Mentsuyu
Also called tsuyu, noodle soup base, Japanese noodle sauce
Japanese concentrated noodle soup base of soy sauce, mirin and bonito dashi; diluted for soba and udon broths, dipping sauce or simmered dishes.
What can replace it
- T2 · GoodShiro dashi
Paler, saltier and less sweet; add a little mirin. (use 0.75× the amount)
- T2 · GoodSukiyaki sauce
Sweeter and stronger, with less dashi; dilute more.
- T3 · In a pinchJapanese soy sauce
No dashi or sweetness; add mirin and a pinch of dashi powder. (use 0.5× the amount)
