Also called Lebanese garlic sauce, toumya
Lebanese whipped emulsion of raw garlic, oil, lemon and salt; fluffy, fiercely garlicky, for shawarma and grilled chicken.
What can replace it

Egg-based and richer, less fiercely garlicky.

Usually creamier and milder, often with yoghurt or mayonnaise.
- T3 · In a pinchGarlic paste
Whip with lemon, salt and oil to emulsify. (use 0.5× the amount)
