Lard
Also called pork lard, rendered pork fat, zhu you, manteca
Rendered pork fat, white and soft; fries cleanly and gives flaky pastry, tamales, carnitas and Chinese stir-fries their richness.
What can replace it

Firmer and beefier.
- T2 · GoodDuck fat
Softer, with a poultry richness.

Neutral, so flaky pastry works but there is no porky savour.
