Fresh, crumbly pork sausage seasoned with chillies and vinegar; tangy and spicy. Fried loose for tacos, eggs, queso fundido and potatoes.

What can replace it

    Firm, cured and smoky; dice finely and crisp it.

  • T2 · GoodCooking chorizo

    Smoked paprika rather than vinegar and dried chilli; less tangy.

  • T2 · GoodMinced pork

    Unseasoned; add chilli powder, vinegar, garlic and cumin.

  • T3 · In a pinch'Nduja

    Hotter and fattier, without the vinegar tang. (use 0.75× the amount)
