Spreadable, fiery Calabrian pork salami loaded with chilli. Melts into pasta sauces, onto pizza and toast, or stirred into stews and seafood.

What can replace it

    Firmer and much less fiery; crumble it and add chilli flakes.

    Heat and colour but no pork fat; add some fatty bacon. (use 0.5× the amount)
