Also called pandan essence, pandan paste
Bright green concentrate of pandan leaf with a vanilla-like, grassy aroma; for pandan chiffon cake, kaya and Southeast Asian desserts.
What can replace it
- T2 · GoodPandan leaves
Blend and squeeze about five leaves per teaspoon; paler colour, fresher aroma, more work.
- T3 · In a pinchVanilla extract
Entirely different aroma; only gives a sweet note and no green colour.
