Also called Sri Lankan curry powder, thuna paha, roasted curry powder, Lanka curry powder

Sri Lankan blend of coriander, cumin, fennel, fenugreek, cinnamon, cardamom, clove and black pepper, roasted dark before grinding; sold in Asian grocers and online, and it is what makes the curry black.

What can replace it

  • T2 · GoodCurry powder

    Far milder and mostly raw: it will not darken or go black. Toast it dry for a minute in a pan first to get closer.

  • T3 · In a pinchGaram masala

    A different, sweet-spice balance with no fennel or fenugreek punch; the curry loses its roasted, dark character. (use 0.75× the amount)
