Concentrated tomato paste; fried briefly to deepen sauces, stews, curries and soups with sweet, savoury tomato flavour.
What can replace it

Sweeter and more intense, often with herbs or oil.

Sweet and vinegary; only for small amounts.

Much thinner; use about three times as much and cook it down. (use 3× the amount)
