Turkish pepper paste
Also called biber salçası, tatlı biber salçası, mild red pepper paste
Thick Turkish paste of sun-dried red peppers (biber salçası), mild and sweet with a little sourness. Deepens stews, köfte, bulgur pilaf and muhammara.
What can replace it
- T2 · GoodAjvar
Looser and smokier, less concentrated; use more and cook it down. (use 1.5× the amount)
- T2 · GoodTomato purée
Tomato-sweet and sharper with no roasted pepper flavour; add a pinch of paprika.
- T2 · GoodTurkish hot pepper paste
Much hotter; use less or cut it with tomato purée. (use 0.5× the amount)
- T3 · In a pinchRoasted red peppers
Watery and far less concentrated; blend and reduce well. (use 2× the amount)
