Mushroom-based stand-in for oyster sauce; thick, glossy and sweet-savoury, for stir-fried greens and noodles.

What can replace it

  • T2 · GoodMushroom dark soy sauce

    Thinner, darker and saltier; add a pinch of sugar and a little cornflour. (use 0.75× the amount)

  • T3 · In a pinchHoisin sauce

    Sweeter and spiced; use less. (use 0.75× the amount)

  • T3 · In a pinchKecap manis

    Much sweeter and thinner; cut with a little soy sauce. (use 0.75× the amount)
