Tofu between silken and firm; tender but just holds its shape, suited to soups, gentle braises and mapo tofu.

What can replace it

  • T2 · GoodFirm tofu

    Holds together better but is less silky.

    More delicate; stir gently so it does not break up.

  • T3 · In a pinchSilken tofu

    Very fragile and custardy; only for braises and soups, slide it in carefully.
