Dehydrated milk powder. Adds richness to Indian sweets and gravies, bread doughs and brown butter, or reconstituted as milk.

What can replace it

  • T2 · GoodWhole milk

    Use it in place of some of the recipe's water; no good for dry mixes or barfi. (use 4× the amount)

  • T3 · In a pinchCoconut milk powder

    Coconut flavour; fine in curries and some sweets.

  • T3 · In a pinchEvaporated milk

    Liquid; replace some of the recipe's liquid with it. (use 2× the amount)

  • T3 · In a pinchSweetened condensed milk

    Wet and very sweet; cut the recipe's sugar and liquid.
