Milk reduced with sugar to a thick, very sweet syrup; for fudge, banoffee, tres leches, Vietnamese coffee and Thai iced tea.
What can replace it

Caramelised and thicker; changes colour and flavour.
- T3 · In a pinchEvaporated milk
Unsweetened and thinner; add sugar and reduce.
- T3 · In a pinchMilk powder
Mix with sugar, butter and hot water; less silky. (use 0.5× the amount)
