Evaporated milk
Also called unsweetened condensed milk, koffiemelk
Unsweetened milk reduced by about half and canned; creamy with a light caramel note. Used in Thai tea, custards, sauces and coffee.
What can replace it

Similar body but no cooked-milk flavour.

Reconstitute at double strength with the same volume of water; less cooked flavour. (use 0.5× the amount)

Richer and lacks the cooked, caramelised milk note; fine in sauces and coffee.

Clearly coconut-flavoured; works in curries and some desserts.

Very sweet and thick; dilute with water and cut sugar elsewhere. (use 0.6× the amount)
