Moscatel vinegar
Also called muscat vinegar, vinagre de moscatel
Spanish vinegar from Moscatel grapes; fruity, floral and gently sweet with soft acidity. Lovely in vinaigrettes, gazpacho and with fish or fruit salads.

Fruitier but less sweet and floral; add a little honey.

Drier and less sweet; add a pinch of sugar.

Mild but neutral; add a little honey.

Darker and nutty rather than floral-sweet. (use 0.75× the amount)
